The 'Importance of Nutrients in Public Health' is a study conducted by William Paterson University in New Jersey that analysed 41 foods, taking into account certain nutrients that are crucial for public health, such as iron, zinc, calcium, potassium, protein, fibre and vitamins. 

These substances have been recognised as crucial by the Food and Agriculture Organisation (FAO) for promoting a healthy lifestyle.

The surprise of the ranking is that, among the top ten most nutritious foods, there is no fruit, only green leafy vegetables. At the top of the list is watercress, followed by Chinese cabbage, chard, beet leaves or green beet. Spinach, chicory, lettuce and parsley complete the list of highly nutritious vegetables.

Moving down the ranking, in 28th position we finally find the first fruit: the lemon. This citrus fruit ranks as the healthiest fruit among those analysed in the study. In second place are strawberries, which are particularly popular with children.
