Blueberry and coconut cream

A healthy and simple snack that perfectly combines the taste of blueberries and coconut milk with the addition of fresh blueberries and coarsely chopped pistachios. This cream a very healthy dessert and has a beautiful color thanks to the blueberry jam. The preparation of this dessert is really simple. And the result is guaranteed.

Ingredients for 4-6 servings
200 ml coconut milk, 2 tablespoons sugar-free blueberry jam, 1 tablespoon birch sugar, 100 ml cold rice milk 2 tablespoons cornstarch, fresh blueberries and chopped pistachios for decoration
Use the food processor
In a food processor, blend the coconut milk with the blueberry jam. Pour everything into a saucepan, add the birch sugar and bring it to a boil
Rice milk
Mix the rice milk and cornstarch thoroughly. The milk must be cold, this is important, because otherwise the starch will not dissolve well
Add rice milk to coconut milk.
When the coconut milk with jam starts to boil, add the rice milk mixed with cornstarch and let everything boil for one minute, stirring all the time

Pour in the cream and let it rest
Pour the resulting cream into cups (or glasses) and let it chill in the refrigerator for at least a couple of hours (but overnight is fine, too)

When serving, garnish with fresh blueberries and coarsely chopped pistachios. Enjoy.
