Pasta with ricotta and lemon zest

Ricotta is a very light cheese, ideal for those who want to keep fit especially during the holidays. This dish will be very light, but delicious on the palate.

Put a pot of water on the fire. Do not salt the water before it starts boiling.
For this type of seasoning, choose a short pasta, such as penne or fusilli. Weigh about 80gr of pasta per person.

Ricotta cheese
Take the ricotta, about 400gr and in a bowl begin to crush it with the help of a fork.

Add a drizzle of extra virgin olive oil
The oil will serve to make the ricotta softer. Also add a little pasta cooking water. Cottage cheese should be creamy.

Lemon
Take a lemon, wash it carefully and grate the peel in the cottage cheese. Remember not to scratch the white part, because it would be bitter on the palate. Drain the pasta and season with lemon ricotta. Add a drizzle of oil, a grated lemon zest and serve. Enjoy your meal.
