Spaghetti Lime, Shrimp and Truffle

Today we propose a tasty and surprising first course, with very few ingredients you will bring to the table a dish that will make everyone say WOW.

For this recipe, the raw materials are essential , which will have to be of first choice. Shrimp will be the protagonists, for this reason I recommend the red shrimp, which with its meat and enveloping taste will give the dish an unmistakable note.

Limes also play a key role; if you can find them, buy organic, because not only will you be using their juice, but you will also have to use the peel. Choose a black truffle that does not cover too much of the flavor but blends well with all the other ingredients.

For this first course you will need top quality shrimp: choose red shrimp
First clean the shrimp, remove the heads and intestines.Cut the shrimp into tartare and place them inside a bowl.

Take two limes
We will use both the juice and the peel to make this dish.Squeeze a lime and marinate the shrimp for a few minutes, adjusting for salt and pepper. Separately, grate the peel. We will need it both to flavor the butter and to complete the dish.

Put a pot of water on the stove. Do not salt the water before it starts boiling.

As soon as the water comes to a boil, salt it wait a few seconds for it to come back to a boil and throw in the spaghetti

Melt the butter in a pan.
and add the lime zest and a little juice. The butter should melt gently. As soon as the butter is ready, plunge the spaghetti into it and stir. Serve on a plate and on top of each spaghetti nest put the shrimp marinated in lime.

Finish the dish with a good grating of truffle.
The truffle in this dish is the added note. But you can replace it with a pistachio or almond grain. To your liking.Enjoy!
