Sobrino de Botin is a restaurant in Madrid, in Spain, founded in 1725 by Cándido Remis, grandson of the chef's wife French Jean Botín.

A long and glorious history
The restaurant still retains the original wood-fired oven. Many famous writers have written about the Sobrino de Botin: Galdós (Fortunata y Jacinta, Misericordia), Hemingway (Fiesta), Graham Greene (Monseñor Quijote), Gómez de la Serna (Greguerías) or, currently, María Dueñas ( El tiempo entre costuras).
